Peanut Butter Banana Toast
Over the years, I have become so bored of breakfast food. Real talk — it used to be my favorite kind of food. But I’m just bored of it now.
It hurts my heart to say that, haha! I’ve always been a die-hard cereal and egg fan. Okay, maybe I still am but it gets repetitive. And this ADHD woman does not like repetition.
So, I was in my kitchen this morning, just absolutely stumped on what to make myself.
Then I remembered I still had some of my Backhaus fresh-baked sourdough left and I noticed a ripened banana dangling from the fruit stand.
It’s been a minute since I made toast with peanut butter and banana on it.
I also wanted it to have more sweetness to it, so I added honey (duh). Then, I added coconut flakes and lastly, poppy seeds because why not. Well, I actually added them because I knew I wanted to take a killer photo for my food photography portfolio…and the details matter, folks. ;)
Let’s talk about these ingredients. It’s only 5 ingredients if you don’t count the specks of poppy seeds. Super easy and quick but you already know this because I’m sure you’ve already made this before. Haven’t we all?
Okay, bread. If you have the option, I highly suggest hitting up your local bakery and buying fresh bread early in the morning. I love using sourdough but you could also use a nut and seed bread or a whole wheat — whatever floats your boat. I just love sourdough for the taste but more importantly, the crunch.
I used Skippy peanut butter. It’s definitely not the healthiest or what I usually buy but Costco Skippy peanut butter…girl, it got me. It got me close and it whispered You want me. You need me. And so I bought Skippy peanut butter. Swap this for a healthier version like almond butter or the mixed nut butter at Trader Joe’s. That stuff screams healthy.
Then, I just used a banana, coconut flakes, organic honey, and poppy seeds! Super simple breakfast toast.
